Okay, so that may not be an exact representation of how kimchi is made, but making kimchi is certainly something you can (and should) try safely at home.

You might think that we, as professional kimchimongers, would discourage the good people of America from making their own kimchi, but there are certainly benefits to Do-It-Yourself (DIY) kimchi. And while it can be a bit messy and time-consuming, it can also be fun (especially if you recruit a kimchi-loving friend) and the chili-infused experience makes for interesting dinner party conversation.
